Vanilla Pears

Hi all. Just wondering if there is any reason that I cannot add vanilla extract to syrup when canning pears. I have done this in the past, but that was before learning that recipes have to be followed exactly. I searched but could not find any recipes for vanilla pears, only recipes that used vanilla when making jams, compotes, etc.

I have a recipe in my 'to try' file that's for honey vanilla pears. From a cookbook copyright 2010. I also asked about adding raspberry extract to my canned peaches last month and was told that it's fine--I assume the same holds true here, but someone else may confirm. Was recommended to watch the 'extra' ingredients in the extract--many have some random stuff in there.

Pears packed in Honey Vanilla Syrup

6 pounds pears; peeled, quartered, cored and trimmed for pint jars
3 tablespoons fresh lemon juice
1 1/2 cups honey
2 cups water
1 vanilla bean

Hot pack method, with a pint process time listed for 15 minutes.

Thanks, balloonflower, That sounds delicious. I figured seeds from a vanilla bean would be okay, but unfortunately I don't have any and these pears have to be canned before they get gritty. I have "pure" vanilla extract with nothing but alcohol added.

Other added ingredients to the 'vanilla' is the only issue. Pure vanilla extract is fine as it is used in very small amounts but the imitation vanilla extracts contain additives that can cause problems.

I generally use a vanilla bean paste instead of trying to keep beans on hand. Much easier, and I haven't noticed enough of a flavor difference in it, even with two snobby foodies in the house (and two budding ones).
