Can you eat corn sprouts? Recipe?

Some of my Merit corn got too hard before I picked it all. I let it dry on the stalks, or I should say I thought it was dry, and put it in my storage building. I planned to feed it to the birds this winter.

Yesterday I just happened to look at it and I've got sprouts about 1" long popping out of the husks!

I thought about tossing them in a salad or stir fry them. Any suggestions besides the compost pile?

Finely diced, we add them to stir fry now and then but don't really care for them otherwise as they are just so darn tough and chewy. Raw in salads it is like chewing rope fibers. JMO

PS: other than compost, the birds love them.
