Subbing zukes for cukes?

I'm in the midst of a salsa making fest, and I also have a ton of zucchini to use up and I'm wondering if I can sub zucchini for cucumbers in the Zesty Salsa recipe from the Ball Complete Book of Home Preserving. It is on page 208.

I like zucchini in my chili so I'm thinking I would like it in salsa. The rest of the recipe looks delish.

Also, it calls for a roasted Anaheim pepper. Would it be OK to just use a raw one? I am not a fan of roasted peppers considering the work it takes to do them. Just not worth it, IMHO.

Obviously would keep all ratios the same in the recipe.

7 cups chopped peeled tomatoes
2 cups peeled cucumbers
2 cups chopped sweet banana peppers
1 cup chopped green onions
1/2 cup peeled roasted Anaheim pepper
1/2 cup seedless jalepeno pepper
1/2 cup cider vinegar
1/4 cup loosely packed chopped cilantro
1 TBLSP fresh oregano
1 tsp. salt
2 TBLSP lime juice (I will use lemon because I have it on hand)

Yeah you can sub them in any of the approved pickled or acidified recipes. Raw vs. roasted pepper is just a different taste issue. Your choice.
