| in the fridge, in the shell, in a closed container? I'm blanching beans (have been for days) and wondering if I should just shell, blanch and freeze the limas I picked Sat AM. |

| I find they keep longer if shelled. The bacteria on the pods tends to start problems sooner rather than later. Shelled and stored in a plastic container with a damp paper towel is good for several days. Of course doing them ASAP is better than trying to store them anytime. Unprocessed time in storage is the enemy of freshness and flavor. Dave |

| OK, I'll shell them tonight. Probably blanch and freeze them tomorrow since it's spaghetti and meatball night. Thanks. |

| I picked more yesterday, shelled this AM. 2 were purple (not speckled) even though pod was green. These going to be OK to eat, or too tough? Save for seed or not dry enough? |
