| If the Hubbard squash was picked before it was fully ripe will it continue to ripen? It has a layer of green inside still. We cooked 1/2 of one last night. It wasn't bad but not great. Would the seeds be any good for roasting? I was always told (as a child) that winter squash was not ready until after a frost. Right or wrong? If it will ripen more, how should it be stored. A friend gave us squash, red potatoes, lots of tomatoes. So I've been busy with the tomatoes. Need advice gmom |

| Most winter squash, when harvested too early, will not actually ripen further. But its' flavor will improve somewhat with time as the sugars in it break down. It also won't store as long as it would have if left on the vine to ripen so plan to use it or preserve it soon rather than trying for shelf storage. The seeds are still fine for roasting. Dave |
