need help preserving peppers

I've got quite a few peppers out in my garden right now and need to find something to do with them. The types are Melrose Frying (sweet), Feher Ozon (paprika), Aurora (hottish), and Lady Red bells (sweet). Can they all be put in the same jar and pickled together? I looked up recipes online but they were for either "sweet" peppers or "hot" peppers- not a mix of both. I wasn't sure if there was some major difference between the two. I've never done this before and don't want to mess something up that might make someone sick.
I just got done drying some peppers along with rosemary sprigs, sage, and lemon grass. The smell that filled the room they were in was oddly alluring... are those herbs something I could use in the pickled peppers? Who knows how they'd taste but I like to experiment. :P

There is no difference safety-wise between sweet peppers and hot peppers. The link below is a recipe for 4 lbs. of hot peppers mixed with 3 lbs. of sweet peppers. That one might give you some ideas.

The site for NCHFP (the National Center for Home Food Preservation) linked below also has instructions for freezing peppers, dehydrating, making pepper jelly - all kinds of things.

Take a look around the site or search here (but the search function is a little unwieldy) and if you have any other questions, someone here will probably try to answer them. Happy Preserving!

Thank you for the link! It looks like something I could use. If I can them will they need to be kept in the refrigerator or can they be stored on the shelf? I've read conflicting answers. These peppers (and possibly other things I come across) will be used for Christmas presents so I don't want to make them now and have them go bad.

The recipe I linked can be stored on the shelf. Most of the time if a recipe is designed as a "refrigerator pickle", it will clearly say to store in the fridge.

Can you please post, or point me toward, instructions for drying peppers with rosemary, sage, and lemon grass? It seems you were making a spice mix? Thank you.
