| late last fall I made and canned salsa. My son eats it like it's air. The problem is he loved the stuff I made earlier in the fall but the later batch is not as flavorful. Can I open these and add more flavor and re-can?? |

| No. Let your son add extra flavors after he opens the jar. Some fresh cilantro or green onions or a sprinkle of cumin does wonders for a less than stellar batch. Yeah, I've had those, too, when the tomatoes weren't quite as good tasting or I used different peppers. |

| Agree. Trying to reprocess this long after often carries unnecessary safety risks plus a very real decline in quality due to the double processing. Do as malna suggested - adjust as needed after opening the jar to serve. If you feel they simply must be fixed now then the guidelines would recommend freezing them, not re-canning. Dave |
