Nightmare on Tomatillo Street

Just over a month ago, when I was young and naive, I was fretting about my 4 tomatillo plants not fruiting.

Now I am nearly drowning in the damned things. The first 10 pounds or so were fun - made posole, canned some, etc. Now I feel like I'm getting 2-3 pounds every time I visit the garden and they're showing no sign of slowing down.

They're attacking like waves of zombies - and I'm losing. I worry I'm going to wake up one day literally buried in tomatillos.

Help! What do I do with them? I can't possibly make any more salsa verde. What else?

Just throw them whole into ziploc bags and freeze them for now. Then work with them this winter.

Pickled green with garlic and jalapeno slices is great on sandwiches. And Green Tomatillo Cornbread is always a hit.
