Hello Anyone know of an approved pickled beans recipe that calls for quart jars instead of pint? Thanks

Far as I know there isn't one as no ingredients list or processing time for quarts has ever been calculated. Whether that is due to a quality issue or a safety issue I don't know but I suspect both factor into limiting them to pints. Dave

Thanks Dave! I'll just trim the length, like I've done before, so they fit in the pint jars. BTW I'm amazed at how good pickled beans are! My favorite way to put them up!!

Yep they are good. The flavor can really vary though depending on which recipe you use? Which one are you using? Dave

I use the tall, quilted, 12-oz. jars to get the longest beans possible. Process same as pints. My original recipe is for quart jars, but comes from an unapproved source. I no longer use quarts, however. Although the recipe would be fairly low risk. It is "on the edge" and I'm not willing to chance it. Has a 1:1 ratio of water/vinegar and 10 min. processing. The smaller jars are more useful in our household anyway. Deanna
