I've linked a very good publication from Utah State. The section on Moisture and Temperature Levels will explain how to determine the moisture content of the wheat you have, and then how to store it.

If you keep it at room temperature, that will be sufficiently dry for milling.
What device do you want to use to mill it. For small amounts I think coffee mill should be fine. but have to run it longer. Then you have to sift it.

Store the wheat in the same canvas bag. Plastic bag is fine too, just as they pack and sell rice.

Seysonn, I have a grin grinder attachment for my Kitchenaid mixer. Does a brilliant job. Previously I have bought wheat already cleaned and ready to grind. This came to me fresh from the field!!
