New Wheat

I was recently gifted with about 30 pounds of freshly threshed wheat, locally and organically grown. My intention is to grind it into flour for baking. To me, it seems a bit damp, like it needs to dry or age a bit before grinding. It is in a canvas bag in my garage until I figure out what to do with it. Also, what is the best way to store it until I grind it? TYIA
