couple questions

I had to leave in a hurry a few weeks ago and threw several pounds of cherries with the pit into the freezer. Could I still process them or should I just throw them away. I thought about just boiling all to make juice/jelly. open to other suggestions too.

and I am canning pears quartered hot water packed with lemon juice BWB. Can I leave the skin on? I have an abundance and need to get them done asap.
