| Help! What do I do. I was going to take them out to ripen & put in freezer. Now I got unripe peaches. I didn't want to can them. My H said to make pickled peaches. Don't they use unripe peaches for that? What can I do with these. Should I thaw them out on table or leave in fridge that freezed them OR put in another fridge that is warmer? I bought a basket full. | Not sure why they would have been in the fridge to begin with - big no-no just as with putting tomatoes in the fridge. But at this point they will need to be used and used quickly with something else to provide the flavor and these will be the 'filler' for want of a better label. I would probably blend them with something strong flavored like orange juice or pineapple and turn them into preserves or NCHFP's Peach-Orange Marmalade. I wouldn't do straight pickled peaches with them as it would basically be vinegar flavored cotton balls but one of the mixed fruit/vegetables chutneys like Cranberry sub (Peaches) Orange Chutney would work well since it would have the onions, ginger, and cinnamon for flavor. | As with any unripe fruit, you will not have the flavor. Sorry. It's hard to find truly tree ripe fruit unless you are growing it yourself, or you go to an orchard. store produce is not picked ripe, unless they buy very locally (less than the 100 miles that most stores call 'local'). |

| I think all the ideas here are good! How unripe were they? Green? Or colored up but just not fully sweet yet? If the latter, I have also used such peaches to make a fruit topping for waffles, etc., by cooking them up with honey or sugar, cinnamon and whatever other spices I feel like (nutmeg, cloves...). Obviously this could also be mashed into peach butter and/or canned :). They would also make a good cobbler or crisp or pie, if flavor-y but not sweet (add sugar), with or without spices. |
