What to do with Carrots

Normally, I can my carrots. But this year, my pantry is already full - and so are my canning jars. So, I figure I can over-winter them in the ground (won't they get woody?), dehydrate them, or freeze them.

What is YOUR favorite non-canning way to preserve carrots - and why?
