Freezing corn

| I just removed the kernels from a dozen ears of corn so I could use the cobs to make corn stock to freeze. I didn't realize most people blanch the corn before removing the kernels. Can I still blanch these kernels and freeze them or should I forget it for these? I was thinking of just using a strainer to remove them from the water. |

| Or don't bother blanching it at all, just use the corn you didn't blanch first. (in the next few months) It will be ok. |

| I am freezing more corn. I read the NCHFP guidlines but don't know why I would leave headspace in a freezer bag. I did the first batch using my vacuum sealer. Should I not use that for the second batch for some reason? |

| OK, thanks. I don't usually leave significant head space even when freezing in containers, unless I am freezing a liquid. Hmmm, not important I guess. |
