| I'm a CSA distro site for a farmer near me. She gifted me with a 1/2 bushel of a mixture of jalapenos, anaheim peppers, and yellow waxy Hungarian peppers (spicy).
a n d a 1/2 bushel of a mixture of colors of bell peppers. I've got green, purple, and yellow Armenian peppers (not spicy). I'm very excited! I'm going to use some in more of Annie's Salsa, dry some, I'm going to have a go at pickeling some jalapenos and the Hungarians, and I'm going to make jalapeno jelly. My husband is excited about the pickeled peppers, but he's concerned they'll be too salty. I plan to follow the recipes on nchfp. Does anyone else have any other ideas? Food gifts like this make me happier than anything else! My daughter's find that hilarious, I find it one of those simple pleasures. :) -Springschel |

| I just checked a couple of the recipes. I'm wondering if pickeling lime is absolutely neccessary? It is called for in the pickeled jalapeno rings. |

| The lime is a crisping agent. You can use Pickle Crisp instead. Or you can skip both but the peppers will be much softer in texture. The salt in the pickled peppers is optional unless you use one of the fermented peppers recipes. Look at the various pepper discussions here for other ideas like relish recipes and keep in mind that peppers also freeze very well. Meanwhile check out all the pepper=based recipes on the Ball website freshpreserving.com. If the link below doesn't work, just type peppers in the search bar there to pull them up. Dave |

| You can split the anaheims in half, remove stem, seeds and membrane. Place on a lined cookie sheet, skin side up and broil until skins are black (alternately, you can grill them). Cover and let cool (I use foil and a kitchen towel). Peel, chop and freeze for "Mild Chilis" all winter. You can freeze bell peppers whole, halved or chopped for use in cooked dishes. Or can them. I just made pickled jalapenos, banana and anaheim peppers (separately, not mixed together). Congrats on your gift!! Be sure to post and tell us what you do with all of them! Those type of gitfts are my favorite kind too. Something I love and it's useful! My FIL hit the mark one year when he brought me all the sawdust and small branches from trimming his mesquite tree in Arizona. I've made some delicious smoked meats from something most would consider trash! Deanna |

| I slice and freeze my bell peppers in single layers on cookie sheets, then transfer them to freezer bags for use all winter. They actually hold their texture pretty well... I kept eating them as I was preparing meals last winter, and they were still pretty crunchy! I'm trying the roasting-and-freezing with Anaheims this year, here's hoping it works out well! I love green chile dishes! |
