How to cook frozen tomatoes?

I've got at least 30 lbs of tomatoes in the freezer right now, which is a lot for me. I'm looking for suggestions/ideas for how to cook them for sauce. Last year I froze some tomatoes (not as many as this year), but I just ran them under hot water, peeled the skin off and chopped them and used them in chili. This year I want to make more sauce, and freeze it. My usual way of making sauce is roasting the tomatoes then running them through the food mill. I don't think roasting is going to be an option for the frozen tomatoes. How do people defrost and process their frozen tomatoes?
