| Hi all, While canning my pickled okra, one jar fell over during the canning process. After I removed the other jars, I righted that one and reprocessed that jar. Other than probably being softer okra from being overprocessed, is this jar safe? Also, is there a problem with the okra sticking out of the brine? They're floating to the top and the tips then stick out. |

| When you say you reprocesssed it, did you take the lid off, reheat the brine (or was it still boiling hot) and start over, or just put the jar back in and process again with same lid? If you truly started over, it's fine. If same lid, you need to refrigerate and use in the next few days. Deanna |

| Same lid, I never took it out of the waterbath so the jar and brine was till boiling, I just set it upright and let it go again. Move it to the fridge and use it now then? |

| It is fine that the food is above the brine. If you reprocessed for the full time it should be safe. Just softer. It was still boiling hot and in the canner, so I see no problem with it. It wasn't as though it was sealed and then put back in there. |

| Agree. If it was not cooled down and was reprocessed immediately, you're fine. Sorry I made assumptions that it was removed from the canner with the other jars and "fixed" later. Deanna |
