Backwoods Home Magazine canning recipe?

Just found this on the Backwoods Home Magazine website under the column "Homesteading with Jackie Clay"? Is it safe? I called Ball Hotline and they don't have any info.

Canning lime juice
I was given a whole box of limes which I juiced and wanted to can. But our extension office could not find info on how to do it � like time. Can you help?

Pour simmering hot lime juice into hot jars then process 15 minutes in a boiling water bath canner. This is the same time required for all citrus juices.

It's safe. Lime juice is very acid (i.e. low pH). Oregon State Extension says 5 minutes pints or quarts for sterilized jars or 10 minutes for hot clean but not sterilized jars.

I would not go 15 minutes. It's unnecessary and may cause some degradation of quality. Store away from light to avoid changes in color.

Carol! So glad you're back! Dh is doing well?

Canning lime juice is safe, but I'd be careful with anything else from that magazine/website. If you find something else, post it here. I saw Dave on another forum, he's back from AK now so he'll be checking in here too.

Thank you very much Carol. My jars are run through the dishwasher before I use them, but I do not have an official "sterilize" cycle, so I think I will do the 10- minutes to be safe. I'll be using pints, which make up 1 gallon of juice. I will be storing them in my canning/coat closet and then using the juice to mix with honey and make limeade all winter.

ajsmama, that's not a website I would look at for canning recipes, but it's the only place I could find lime juice. I originally wanted to make a limeade with lime juice and honey, but since I can't find that, I'll add the honey when reconstituting. I have a recipe for lemons and honey, but not sure it's the same acidity. Better safe than sorry. I will also look up the OSE, which I must have missed.

Lemons and limes can be used interchangeably.

Carol!! Great to hear from you. We've missed you here.

Lime juice is just another citrus juice and NCHFP and Ball books cover citrus. But note the both recommend freezing over canning. Exposure to heat changes citrus flavors so use the shortest processing time possible.

Yes, I think freezing would be preferable, but I have a very small freezer. I am dreaming of an upright but that won't happen just yet. Last year I did lemon with honey and it reconstituted into a wonderful lemonade all winter. I'd have done the same thing except that lemons were $47 for a case. That would be million dollar lemonade.
