Safe zucchini recipe

SO glad to see the Tomatoes with Zucchini recipe is still at the NCHFP site. What with so much talk about zucchini not being safe to can, I was afraid it had been withdrawn, and we really liked it! The older recipe I have calls for a slice of onion per jar also, but I can just add that when ready to eat.

And you're in luck: The linked page says, 'Variation: You may add four or five pearl onions or two onion slices to each jar.'

Wow, 30 minutes for pints. That is a lot! Does it come out like a sauce, or are the chunks of zucchini and tomato still separate?

Thanks NilaJones...not sure how I missed seeing the onion variation was still there!
When canned in quarts (35 minutes!), the zucchini is amazingly still separate from the tomatoes, although the tomatoes do get a bit saucy. I "cubed" the zucchini by slicing thick and then quartering. Makes a nice side dish.
