| keepitlow, I've packed mine in layers in sand and had them last until Christmas. They might have lasted longer, but we ate them, LOL. They were not as firm as they were when I put them in the cellar in October, but they were still very good, so I'm thinking they would have easily stayed good through January, maybe longer. I did remove the tops, because we love beet greens, and left about an inch of "stem". I left the root tip intact and I didn't wash them, I just pulled them, removed the greens, spread them out to dry for a couple of days, then stored them. I love beets nearly any way. I like them canned and pickled, I like Harvard Beets, I like them in salads, I like borscht. That's why they never last past December, LOL. Annie |

| I kept mine last year in a big tub of peat moss-based potting mix, and they lasted until February, and after that, began to shoot all kinds of roots and stems and such. I was going to use straight peat moss, but had a bale of potting mix there, so used it for both beets and leeks, then used the same stuff for seedlings. I kept the tubs in the greenhouse, where it's pretty dry, 50 - 75ºF. Needed to add some water now and again. |

The longest I ever kept them was till December unless I can them. Not that they became soft or sprouted but because we ate them all. Beet lover here too. Reminds me, need to crack open a jar of the spiced beets and onions for pickled eggs. |

| I've tried keeping them in the cellar with limited success. Now I roast them according to standard method, peel and freeze in zip top bags. I can pull out one or two for a salad, or heat more as a side dish. Texture is great, just like freshly cooked. We like them so much they don't last long, every year I have to plant more than previously! |
