I have to admit, I was raised a city girl, and when I started gardening I was astonished to learn that red peppers are the same thing as green peppers, just more ripe! Depending on the variety, peppers turn red, orange, yellow, or even purple when they are ripe. Green ones are unripe (except a few unusual varieties that are green when ripe). Just like tomatoes! Who knew? (This explained to me finally why sweet red peppers are so much sweeter than green ones.)

Anyway, maybe you knew all this --- you say you are a new canner but perhaps you're an experienced gardener. But it was news to me!

I did know about the peppers :) from gardening, but wasn't sure some sort of acid change took place when they turned colors. I guess I'm a little paranoid. Thanks for all the advice and encouragement!

I figured. Few people are as clueless about vegetables as I was when I started gardening! I was even startled the first time I looked into a package of seeds for planting peas and I saw... peas! ;-)

I was definitely clueless also! Now I don't feel so bad when I looked into my seed packet and saw peas and was surprised! I was also surprised by the beans in the bush bean packets and the garlic for garlic bulbs and onion sets :) There are still plenty of things that surprise me. But, it's trial and error is fun and everyone on the gardenweb is so helpful! Thanks Zabby!
