| Stupid me, I canned 7 quarts of potatoes yesterday. Just now re-read the recipe before putting it away and noticed I was supposed to use clean water w/ the potatoes after they were cooked. I didn't. I used the water I cooked them in. I notice they are quite thick, but will this hamper them in any way? I really hope not, since this was out first crop of potatoes and 6 were rotten before I got to them (in the basement, not in the garden.) |

| It will negatively affect the flavor and the texture because of all the starch in it. Not a safety issue assuming proper processing but it will limit their use later. Used plain they have a funky, muddy flavor so plan to use them mixed into other stronger flavored dishes and such. And be sure to rinse them well after opening the jar before use. Dave |
