Custom Jelly making

Has anyone made jelly from a customer's juice (she wanted organic juice) and she furnished the jars? It was just 1 qt of juice. I quoted her $10-15 for my time, pectin, lids and sugar. It was a simple grape jelly. How does my price sound? It made 6 1/4 pints and 5 1/2 pints.

I don't plan on doing this, but she babysits for a highly sensitive child and wanted organic juice for her, with no preservatives except for sugar.

10-15 dollars total? Sounds low to me. I know you do sales so what would you have sold those jars for if you had been making them for sale?

I don't sell the 1/4 pints, but if I furnished everything, then I would have sold them for $32 for 1/2 pints or $24 for pints. I thought I was low, but didn't expect anyone to ask about it. Kinda blind-sided.

I allow $1 per jar, so that would take the $$s down to $20-24. I think I should have said $20 instead of the $10-15.

$25 sounds about right to me, maybe even a few dollars more. But I also know about pricing for favorite customers or special situations and I've undercut my own pricing now and then when it comes to selling plants in the GH for special circumstances. I just have to hope they don't spread the word. :)

I would charge $48 for 8 halfpints of grape jelly (drop to $32 after 8-9 months) but that's made from our grapes (so labor picking and extracting the juice), buying the jars, making the jelly (labor, electricity and sugar - no pectin so it would take nearly twice as much juice).

Sugar and pectin probably ran you $3 and lids another $1.50, I don't know about energy costs but $0.50 (propane, not our expensive electricity and pectin goes faster)? So say $5. I wouldn't do it for $10, I'd say the $15 since you already mentioned that. More than minimum wage but since you have to pay self-employed SS tax on it, doesn't end up any higher. Not something I would want to make a business out of.

I'm so glad that I'm not paying the store price for pectin. I will not pay the $2 box when I pay only about 33cents for the same amount. that saves alot.

I normally get $4 for 1/2 pints, and the total of jelly amounted to 8 1/2 pints.

How much do you pay for sugar? I estimated 50 cents/lb to make math easy, but I buy 10 lb bags for about $4.39.

I get 25# for less than $10, and used 5 cups. I thought 10# would be cheaper, but found out otherwise. I've bought almost 300# this summer. 25# is the biggest that I want to handle at a time. I rebag it into 4-6# in gallon ziplocs.

I'm just happy she only wanted this much, or I would've ordered more pectin. Next time will be 25# instead only the 5#, figures much much cheaper. 1 box equivalent will cost me about 28 cents instead of the box or jar price.

Just curious what kind of pectin you used and whether there were any preservatives in it.

I get it from nuts.com, but I'm thinking about making some from all the apples that we have this year. This is what they list as ingredients.
Dextrose, pectin, fumaric acid

Packaged in the same facility as peanuts, tree nuts, wheat, soy, and milk products.

Personally, I probably would have done the same thing--lowballed the initial price, then had second thoughts later. I think if there's a repeat time, I would probably go with $20. If you haven't delivered already, then I would mention that along with the delivery, so that the upgrade is realized before she calls again. And maybe you'd get lucky and she'd pay more right away.

That's exactly what I plan on doing, she gets them Friday. At this time, there is nobody doing any jellies or jams, the other gal is done for the season.
