Less than 24 hours you can reprocess it. Or refrigerate it and use ASAP after cooking it well first.

That was my initial thought, but then the thought of meat sitting out on the counter all night had me second guessing. I will cook the heck out of it this evening!

Just a thought for your own comfort - an unsealed jar allows for air and botulism spores proliferate in an air-free environment. So the worst form of food spoilage is unlikely.

Nevertheless, refrigeration followed by speedy use is the best option.
