| Hi All!
I got many slicing cucumbers in my co-op basket and I was thinking of making pickles. I was wondering what would be best? Bread and Butter or spears? I realize that making pickles out of slicing cucumber can turn out soggy but I was going to soak them in lye in very cold water over night, then after rinsing them, soak them in ice water. For the spears I was going to make a fermented batch using a polish recipe I found. Any advice you can give me would be much appreciative. If either of those wont work, what are your favorite relish recipes? |

| If using slicing cukes I'd recommend B&B rather than spears. With added onions and peppers in B&B the soft texture isn't nearly as problematic. Spears of slicers just don't hold together - it's like eating pickled slime IMO. Lime can help if you want to deal with the risks of using it but not enough to make that much difference. Best yet, use them to make pickle relish of some kind. That is by far the best use for slicers. Dave |
