Crabapples This Afternoon

Finally cooked up the crabapples this afternoon and have the pulp dripping juice into a pot. I'll let it drip until tomorrow evening. Well, I didn't read the crabapple jelly recipe until after I finished cooking the crabapples. Okay, I'm bad! Anyway, it called for 3 cups of water for 3 pounds of fruit. I think I added less than a cup of water to a little over 4 pounds of fruit. Should I go ahead tomorrow and add another 2 cups or so of water before I make the jelly?

If you get a chance at them early next year, you could try some homemade pectin. And picking some off early will make the later ripe apples bigger. Tip, make sure you use the 70% alcohol to test versus the 50% cheap stuff.
