What can a person do with small sweet tatos? Got a bunch around 1" to 2" in dia. 6" 7" 8" long. Just hate to waste them. Thanks Ed thespeedofwood.com

Peel, cut into cubs, blanch (to kill enzymes) and freeze, as you do with pie pumpkins , squash. Or fully cook, mash and freeze.

Half or quarter them long ways and they make good fries. If they're just fingerling size, you could fry them as they are after a good scrubbing. Mine didn't do good at all this year. Last year, over 50 buckets. This year, less than one. Too much rain this summer for much of anything around here.
