I have an extra fridge in the garage and I put 32 pounds of carrots that I bought on sale in there. I have not had time to can them and carrots last awhile so I wasn't too worried about it. I had to get in the fridge today and almost every pack has ice crystals in it and the carrots are partially frozen. Can these be canned? Will they turn to mush when thawed? I really want to save these because of the money I spent on them. I turned the thermostat up a few days before putting them in there because it was on the lowest setting and I didn't realize it when I put my extra milk in there. So it wasn't keeping it very cold obviously. So I put it in the middle position. Obviously this was too cold. Thanks for the help.
