| Hi - I canned banana peppers with a clove of garlic a while back. I don't remember where I got the recipe, but it was from one of the common approved sites (at least I'm pretty sure it was). The clove in each jar has turned a greyish color - is this natural? Thanks! Jennie |

| Did your recipe have vinegar in it too? I pickle garlics in vinegar and age them like wine. As they age get grey and after 3 years they turn very dark brown, soft and sweet. |

| Some garlic will turn "blue" (or gray-ish) in the jar. It's a normal enzymatic reaction and except for looking a bit odd is nothing to worry about. It's unavoidable and just the luck of the draw. Carol |

| Thanks for the quick reply. Yes, the recipe had vinegar - A LOT of it :-). Good to know it's normal. For newbies, it's hard to know what is or isn't OK. This site is a GREAT source of reliable information! |
