Sweet and sour green beans

My grandmother used to can the most wonderful green beans. They were sweet and sour, but not pickled. Much weaker vinegar flavor than pickles. I was wondering if there is any reason that I cannot add vinegar and sugar to green beans process according to the PC instructions for green beans? It seems to me that should be okay, but wanted to check first.

No reason whatsoever. Adding vinegar to green beans was a common old-fashioned practice. As long as you follow current processing guidelines you can add however much vinegar and sugar you wish.

You could use a three bean salad recipe, which has both sugar and vinegar in it and the beans come out great. And you can BWB it.

Thanks Carol and Chris. I think the 3 bean salad recipe is much too vinegary for what I'm trying to replicate. I'll experiement with the amount of sugar and vinegar and then PC.

For me, the correct sweet/sour taste comes from equal amounts of sugar versus vinegar, if that helps.
