| in a pear pineapple marmalade? I got 2 fresh pineapple Hubby bought inthe fridge. not used for like almost 2 weeks... If I have to I will use the pineapple I canned ,Late last year ...
Recipe calls for 1 pound 14 oz can pineapple , 4 lbs pears ,2 large seedless oranges 12 cups sugar ,1 jar (small) mara. cherries..... No way will I use 12 CUPS sugar and doubt if I use the mars. cherries. I remeber making like ,the carrot cake jam and used less than half the called for sugar and it was fabulous... this receipe A Sunset book called "canning, freezing, and drying" Thanks Jean |

| Yes. However, keep in mind neither pineapples nor pears have much pectin, so this is unlikely to set very firm without a good amount of cooking down. Reducing sugar will further impede the set. You may have to accept a softer set to avoid over-cooking. Carol |
