| Hi,
Longtime lurker here. I have apples simmering on the stove at the moment for sauce. If I decide they need to be a little sweeter after they cook down, could I use honey? I'm a beekeeper and my girls had a really good year. I know that there is some type of botulism present in honey and I tell my customers with young ones to consult their pediatricians before giving it to the kids. Any issues with using it? Any other ideas for using honey would be appreciated.

| JMO but I wouldn't use honey. Not only would it affect the texture but if you sell/gift it using honey would add another safety concern to deal with. If just for personal use why not try some in a small batch and see if it appeals to you? How much would you have to use to replace the sugar, how would it hold up chilled, does it crystalize at all, etc? Dave |

| You can put it in applesauce as long as you do not feed to small children. |
