| I haven't opened any of the jars I canned in September yet, but I have finally tried the extras that I put in a jar in the fridge. i believe these are the salted ones, not limed. Linda Z's. Heavy sweet spicy almost candy like. Solid, but not crunchy. Delicious with BBQ. Very curious to try the others later on. But I have high hopes for them as well. And to think they came from a typically wasted product. Not a lot of prep involved other than peeling and slicing. No problem with accumulating enough at one time to do a batch or two. :-) I tried putting pickle crisp in some of the jars of salted pickles before I canned them. I actually did do the limed pickles as well. No big deal. Those were supposed to have mint in them, but I only put mint in half of them. Did the dark ones as well, but I didn't have extras. Funny how that works sometimes. I kept the lemons instead of discarding them. They're really good now as well after being refrigerated in the pickling syrup. It has been an interesting year! :-) |
