| I was asked a question this morning that I couldn't answer. A coworker was given a bunch of green pimentos and she wants to use them to make pimento cheese.
I know that they will not be as sweet as the ripe ones, will they ripen off of the bush or rot? I've never tried it, I just use the green ones as I would regular green bell peppers. She wants them to taste like the pimentos from a jar. I don't have a recipe, but I think the jarred ones are roasted and peeled then soaked in vinegar and oil for a few days? Can she do this with green ones and they turn out good? Since I'm known as a gardener and a good cook.... I'm always the "go to guy" for any and all of these types of questions! LOL |

| I had some ripen in the house. Sounds really strange, but I put some that were nearly red in the microwave for a few seconds. You could literally watch then turn red. You don't use oil when canning them. Here is how to can them. |

| She doesn't want to can them, she just wants to make them OK for fresh homemade pimento cheese. |
