green pimentos

I was asked a question this morning that I couldn't answer. A coworker was given a bunch of green pimentos and she wants to use them to make pimento cheese.

I know that they will not be as sweet as the ripe ones, will they ripen off of the bush or rot? I've never tried it, I just use the green ones as I would regular green bell peppers.

She wants them to taste like the pimentos from a jar. I don't have a recipe, but I think the jarred ones are roasted and peeled then soaked in vinegar and oil for a few days?

Can she do this with green ones and they turn out good?

Since I'm known as a gardener and a good cook.... I'm always the "go to guy" for any and all of these types of questions! LOL

I had some ripen in the house. Sounds really strange, but I put some that were nearly red in the microwave for a few seconds. You could literally watch then turn red.
You don't use oil when canning them.

She doesn't want to can them, she just wants to make them OK for fresh homemade pimento cheese.
