| Hello, we began pickling some lemons last weekend and noticed two things that had happened. First, the jar popped open and leaked due to pressure. We closed them tightly again. Second, we didn't clean the jars since they popped open and now we see this strange object on the lid (it is in the attachment). Could it be a fungus or is it just harless chemical deposits? We wonder if the lemons inside are still safe, and what we should do now. Thank you very much. |

| How are you pickling these lemons? Are. You fermenting them with salt? Using vinegar? We need more info about what you are doing to help you. I can tell by the photos that this wasn't a BWB situation. |

| Looks like fungus growth and mold due to improper or lack of processing. As pixie lou said, we need much more info on how these were done but just resealing a lid - especially one not intended for canning like in your photo - will not insure the food is safe to consume. I would throw these away. Dave |

| It could also be molded fermenting bubbles, as I'm assuming that is how your pickling them. Looks like the it was bubbling out, dried and molded! Let us know how you were pickling them, add the recipe if you can. the experts will chime in for sure!!! BTW, yuck! LOL! |
