drying cranberrries - craisins

| I just tried drying a batch of cranberries in the dehydrator and they are awful! I would like more info on precooking them; such as, length of time, do they go driectly from cooking into dehydrator, and any other info that might be helpful. Thanks. |

| Wash, dip small amounts at a time in rapidly boiling water (I use a med size tea strainer) just until the skins split/pop, drain well on paper towels, spread in a single layer in the dehydrator and set temp for 140 degrees. Done when shriveled and feel light weight. Dave |

I just did some too. I actually semi-cooked 2 bags of cranberries with some water and sugar (wanted them a little sweet). Just till it looked like most had 'popped'. Dehydrated those sticky little suckers for nearly 2 days, had to manually 'pop' a few part way through. So, for $4, I get a cup and half of dried berries (not counting the electricity). I've decided, for me, it's just not worth it! I use so few, I'm not going to freak out over the small amount of preservatives or whatever. JMO, Deanna |

| I tried this earlier this summer with blueberries - i.e., boil briefly to break the skin and then dehydrate. They were so mushy and did not dry out even after a day. I finally turned them into blueberry sauce. My boiling time was was only 30 seconds too!! I'm either buying them dried or using apples or peaches which do dehydrate fine. |

| Interesting! I didn't read anything and tried to blindly dry some cranberries yesterday. I did not boil them first, just stuck them in a slow oven. They got too dry (all light and crunchy) which I chalked up to leaving them in there all night. I then put them in boiling water and let them rehydrate a bit, and then they were okay. I think at some point I popped the ones that looked all fat and inflated (which was extremely fun because it made a noise). |
