When you just throw something together...

Do you ever wish that you had measured the ingredients? :)

Last night I cooked 2 sweet potato pies for my DW to take to work with her today. I cooked too many sweet potatoes.

So, I decided to make something with my leftover potatoes and some other stuff. No measuring, just throwing some stuff together that I thought would work.

And It worked very well!

Just a guess, but I had about:

6 cups of leftover mashed sweet potatoes

1 1/2 cups of leftover dried fruit, cranberry, raisins, and other berries, a melody mix

I added

2 eggs

About 1 1/2 cups of store brand fake Bisquick

About 1 cup of brown sugar and a dash of salt

a half of a stick of butter

Then I stirred in some leftover half and half until I had a fairly thin batter. Not as thin as cake batter.

I poured it in to 2 glass baking 6X10 dishes that I sprayed with oil.

I baked at 375 for about 40 minutes until a toothpick came out clean then turned to broil to brown the top.

I couldn't stop eating it! I took some to work and everyone wants the recipe that I don't have!
