 o
Blue Hubbard Squash - to store or freeze?

Someone gave me two huge blue hubbard squash. I've read they are particularly good for storage, but I really have no suitable place to store them. I could keep them on the kitchen floor, I guess. But I'm thinking it might be better to freeze it. Any words of wisdom for me here? To freeze it, is it best to cook it first? Thanks!

If you don't have proper storage then freezing would be the best option. Detailed instructions on how to cook and freeze below.

Some cooking will be required first just to get it out of the shell but how much depends on how you do it. Some bake, some boil, I prefer to microwave mine until soft enough to cut and remove the rind. You can then freeze it mashed or in chunks.
