Safe to eat - Saurkraut

Hi All,

This last week has been crazy busy for me and I forgot to check my saurkraut. Last night when I went to put it in a jar to put in the fridge, I noticed that quite a bit of brine was evaporated. I got rid of the saurkraut that was on top but put the saurkraut that was still under the brine in the jar....is this kraut ok to eat?

Yes it is assuming it was made with the correct ratio of salt to cabbage. Any sign of mold? If so just skim it off.

No, no mold...just some crispy kraut that I threw out....
