| Hi All,
This last week has been crazy busy for me and I forgot to check my saurkraut. Last night when I went to put it in a jar to put in the fridge, I noticed that quite a bit of brine was evaporated. I got rid of the saurkraut that was on top but put the saurkraut that was still under the brine in the jar....is this kraut ok to eat? Thanks,

| Yes it is assuming it was made with the correct ratio of salt to cabbage. Any sign of mold? If so just skim it off. Dave |
