I'm not sure exactly what you are looking for. "Shelf stable" meaning you want to can and process these already frozen peaches in some way? Not really recommended for several reasons including quality as they will turn quite soft, even mushy. But there are many pickled recipes for them available in BBB and at NCHFP if texture quality isn't an issue. Pickled peaches, fruit relishes and chutneys, etc.

But then you say "out of refrigeration" for several days. So something shelf-stable isn't necessary as refrigeration wouldn't be relevant to shelf stable things. Could you clarify please?

On the other hand they can be used in many gift baking recipes - breads, cakes, tortes, tarts, turnovers, etc.

digdirt is right that you aren't too clear on exactly what you are looking for... but maybe can up peach pie filling from those frozen peaches? That would be shelf stable. Or perhaps peach syrup of some sort?

Yep, I wasn't very clear, huh? I was originally thinking about doing mini pies or cobblers, but I think that they may not stay fresh as long as I need. I don't necessarily need it to last a long time, but will probably make up "whatever" about a week before I give it. Then, it may not be used for several more days. So, looking for something that can stay fresh for up to two weeks. If that's hard (and I think it might be), I'm open to the sauces, etc. Hope that helps you help me :-)

Then I would focus on one of the many mini-loaf fruit breads (aka quick breads) and/or cookies. They can be baked at any time and then frozen until ready to gift and shelf storage or refrigeration issues would never arise.

You might also consider drying the peaches for fruit snacks.
Those could be stored as long as necessary.
