| I love these cajun pickles at a yearly festival so this year I bought a couple gallons of them. They have been in a big 5 gallon container in the fridge for about a month. Can I still can them and dry store at this point? If so, what would be the best method for this? I have always used the boiling water method with my limited canning experience in the past but was not sure what do do here if it was even possible. Again, these pickles are completely ready to eat and are in an open and close container. Thanks! |

| Agree with the above. In theory, you could but you wouldn't be at all happy with the results. You'd have to heat at least all the brine to boiling first and for best safety you'd have to heat the pickles and the brine to boiling first. Then process them in a boiling water bath for an additional 10 mins. They would be mushy and soft. Even then you'd have no way to know if they were safe for shelf storage since we don't know the pH, the amount of vinegar used. Not everything can be canned, sorry. Dave |
