I just wanted to Thank everyone for guiding me throu this . I dont really have anyone but all of you for guidence . Everyone I know canns the old way and some I hear scares the heck out of me.I know everyone has busey lifes , so I really do Thank you for all the answers. I guess there are just some foods that are better canned and some dehydrated. and some in the frezzer.I live close to a farmers market and I can get vegetables cheeper than a store.I have kids in the Military and pay is not the greatest. So I try and help when I can . I would rather die than give unsafe food.I am very picky about being clean.I've been carefull not to be talked into doing things the old ways.Some things I dont understand is why do some books say to cut spots of of tomatoes and some say throw away. I can understand if its firm to just cut , and if to soft throw away. It sounds like common scence to me.Does the bad spot go deeper than we can see inside.Bacteria that we cant see .Maybe Iam just to carefull.Ive tried to do things according to the Ball books.I will not eat some of the canned goods my friend and cousin have given me .Because I've seen their ways of canning(oven) and not really timming and processing.My grandmother did things the old way also.But I've wanted to be taught the right way.So I can pass it down to my children.Iam greatfull to all of you for helping me. So my next adventure will be Dehydrating. As soon as I can save the money to get one. LOL. Thank you , jamie
