Green tomato pie filling - question

Any idea if there would be any safety issues with leaving the peel on the apples in the recipe from "So Easy To Preserve"? The recipe calls for peeled, but I would prefer to leave the peels on. Do you think it is more of a texture/preference issue?

Texture/preference, in part but you will find that most all the NCHFP/USDA recipes will recommend peeling things. The reason - because the peel is the primary source of bacteria and other contaminants. Studies post processing show marked reductions in contaminants when things are peeled first.

It's a debate that comes up often with apple recipes, potatoes, carrots, etc. and ultimately the choice is yours.
