| Any idea if there would be any safety issues with leaving the peel on the apples in the recipe from "So Easy To Preserve"? The recipe calls for peeled, but I would prefer to leave the peels on. Do you think it is more of a texture/preference issue? |

| Texture/preference, in part but you will find that most all the NCHFP/USDA recipes will recommend peeling things. The reason - because the peel is the primary source of bacteria and other contaminants. Studies post processing show marked reductions in contaminants when things are peeled first. It's a debate that comes up often with apple recipes, potatoes, carrots, etc. and ultimately the choice is yours. Dave |
