What kind? I've used powdered pectin way past the expiration date with no problem. My liquid pectin (which was only two months past the date and kept in the fridge which is why I forgot about it) failed totally.

It should have a "use by" date on it. My liquid pectin seems to be good for about 18 months. I don't have any of the crystals.

Use Pomona Pectin and it has no shelf life.

It's liquid pectin. I'll check for the shelf life, but I'm sure it's more than 18 months. That's the stuff I never had luck with, even fresh.

I doubt if it will gel. I do agree about the liquid pectin not being as reliable as the powdered. The Pomonas has no expiration, as was mentioned, so that is one great thing about it. It really is different stuff than the store brands.
