Canning venison

I have cut my venison into chunks for canning but I am not going to be able to process it today. What is the best way to store it for canning tomorrow morning? I don't want to brine it that long. Should I just cover and refrigerate or do I need to cover with water. The deer has been on ice in the cooler prior to cutting today. Thanks in advance.
