| I have cut my venison into chunks for canning but I am not going to be able to process it today. What is the best way to store it for canning tomorrow morning? I don't want to brine it that long. Should I just cover and refrigerate or do I need to cover with water. The deer has been on ice in the cooler prior to cutting today. Thanks in advance. |

| Wrap it up in air-tight foil bundles. You want minimal exposure to air. Vacuum seal packing works best. If that isn't possible I'm afraid you are stuck with submerging it in water, broth, or juice (whatever liquid you plan to can it in) in the fridge. Next time you shouldn't let thaw completely when cutting it up and that way it can right back into the freezer. Dave |
