Heather - how important is soil pH?

I just picked up a number of Erica carnea (Mediterranean Pink) heather plants. I understand that this is a more pH tolerant variety. However, our soil has a pH of 7.0 which is far away from the acidic soil that heather typically needs.

Do I need to adjust the pH of the soil and how should I go about it?

My initial guess is that I should add sulfur to the soil to bring the pH down to about 5.5. I also understand that peat moss is quite acidic but I'm unsure of how I should use it.

Anyone else growing heather in neutral soil? How should I proceed?
