Heirloom veggies/herbs for containers?

I'm planning to grow some heirloom vegetables and herbs next year. I was curious as to any recommendations you wise folks might have.

For herbs, I'd like to grow the following:

Basil, Cilantro, Parsley, Sage & Mint

For veggies, the ones I'm considering for container gardening are:

Carrots, Lettuce greens, Sweet Peppers, Spinach, Kale, maybe a variety or two of tomato.

I'm especially interested in any insights you might have regarding the herbs....and lastly the leafy veggies (we've got no shortage of rabbits in the area hence my idea that containers might be a better way to protect the crop).

I don't know about the others, but for peppers I would definitely grow Alma Paprika. I have grown this for three-four years now, and it produces very well, the peppers are beautiful cream color to blush to orangey-red, and you get an assortment on one plant of mostly sweet with an occasional hot one. They make great sauce, and they are nice and thick and crunchy. It's a Hungarian heirloom.
