Does anyone know of a organization like the seed savers exchange but for fruit trees? Im trying to start a orchard and want some heirloom fruit trees for the kansas area.

Not sure if you have tried grafting. You'll open up a lot of options if you'd like to give it a try. I recommend the Davenport Collection at the Tower Hill Botanic Center in Massachusetts.
