Veggies to pick over a long season?

By accident (or laziness) we discovered that leaving carrots in the ground in our zone 5 garden we could pick them as needed. This is the first year we've had an in ground garden and we were pleasantly surprised how much sweeter and better tasting homegrown carrots are compared to store bought. Next year we want to plant heirloom carrots to pick over a long season since this has worked out so well any suggestions on specific kinds?

Also, we are still picking parsley and other herbs we make a lot of homemade chicken soup so this is just wonderful. Our Swiss Chard has survived a couple of frosts and is still going strong too so I see the garden as being more than just a summertime thing. I would like to plant next years garden with a longer season in mind now. Any suggestions for veggies to go in this garden would be most appreciated, thanks.
